신제주해장국은 경북 영천에서 시작한 식당으로, 제주식 선지해장국의 진한 맛과 정통성을 전국적으로 널리 알리며 빠르게 성장하고 있다. 제주도의 전통적인 해장국을 그대로 재현하기 위해 조리 방식에 집중하며, 특히 당일 도축한 신선한 선지만을 사용해 특유의 잡내 없이 깊고 진한 감칠맛과 부드러운 식감을 살렸다.
또한 신제주해장국은 ‘제주식 해장국’이라는 단일 메뉴에 집중해 조리의 전문성을 높이고, 항상 균일한 맛과 품질을 유지하는 데 주력하고 있다. 이 같은 운영 방식은 빠른 회전율과 높은 고객 만족도를 동시에 실현하며, 각 매장을 안정적으로 운영하는 원동력이 되고 있다.
