화덕 생선구이 전문 브랜드 ‘화덕으로 간 고등어’가 소형 전문 매장 ‘화덕으로 간 고등어 반상’을 오픈했다고 28일 밝혔다.
브랜드 측에 따르면 화간고는 500°C의 화덕으로 고등어, 갈치, 삼치, 임연수, 굴비 등의 생선을 구워 담백하고 고소한 맛을 선사하는 생선구이 전문점이다. 화간고는 생선구이 전문 프랜차이즈 브랜드로서 생선 구이에 대한 높은 전문성을 가지고 있을 뿐만 아니라 ‘바다와 땅이 주는 건강한 밥상’이라는 브랜드 슬로건을 내걸고 제철 재료를 활용한 음식을 제공하고 있다고 밝혔다.
한편 새롭게 문을 연 ‘화간고 반상’은 화덕에서 구운 생선, 제육볶음 등 주메뉴와 함께 다양한 반찬을 즐길 수 있는 1인 단위의 정갈한 상차림 구성이 핵심 콘셉트이다. 화간고 반상의 첫 매장은 영등포구 문래동에 자리잡았으며 오픈 직후부터 인근 직장인과 지역 주민의 방문이 이어지고 있다. 이는 생선구이 전문점 자체가 갖는 높은 희소성과 반상 형태의 정갈한 상차림이 시너지를 내며 고객의 관심과 만족도를 높인 결과로 풀이된다는 것이 브랜드 측의 설명이다.
또 화간고는 외식업 브랜드 애그리게이터 SPBT(에스피비티)와의 협업으로 사업을 고도화하고 있다. 전국적인 매장 확장을 꾀하는 한편 보다 다양한 고객이 브랜드를 즐기고 경험할 수 있도록 매장의 형태와 시스템에 대한 개선 역시 함께 진행되고 있다. 특히 기존 화간고가 대형 매장에 적합한 모델이라면 화간고 반상은 20평대의 소형 매장에 소자본으로 창업할 수 있도록 전략적으로 기획한 모델로 다양한 상권에 출점이 가능하다.
브랜드 관계자는 “화간고 반상은 새롭게 기획한 소형 매장이지만 KBS Life ‘대호왔대호', SBS ‘생방송 투데이 맛의 승부사’ 등 다수의 방송을 통해 브랜드가 소개된 만큼 높은 인지도를 갖고 있어 출점 상권 내 높은 매출을 달성하는 매장으로 빠르게 자리잡을 것으로 예상된다”고 말했다.
홍기윤 화간고 대표이사는 "화덕으로 간 고등어 반상을 통해 정갈한 한상 차림의 식사를 더욱 많은 고객에게 전할 수 있게 되어 매우 기쁘며 단순히 음식을 제공하는 것을 넘어 한 끼의 소중함과 정성을 담아내고자 한다"며 “작은 평수로도 운영이 가능한 창업 모델로서 빠른 속도로 브랜드가 확장될 것으로 기대되는 만큼 전국 각지에서 화덕으로 간 고등어를 만나볼 수 있도록 최선을 다할 것”이라고 말했다.
